Gourmet Restaurant
Located in a shopping district on the outskirts of Périgueux, this recently opened four-star hotel features an immersive restaurant that transports its guests into a recreated cave. Born from a collaboration between chef Antoine Mousnier and the Saphores family, this unique venue offers a true immersion in the world of the Périgord, both through its décor and its cuisine. The menu showcases the region’s iconic ingredients. The “Premier Pas” menu offers a wonderful introduction with pairings such as duck, Cabécou cheese, and walnuts, or guinea fowl, bulgur, and chorizo. For a more complete experience, the “Découverte” menu—available in four- or five-course versions and not shy about incorporating a few trendy touches—begins with a seasonal pre-appetizer, followed by a soy-marinated sea bream ceviche served with house-smoked trout, a fennel espuma, and Sarlanoix cubes in jelly. Next comes a duck fillet served with carrot purée, morels, and a perfectly reduced meat jus. The meal concludes with a refreshing dessert combining meringue, strawberries, vanilla ganache, yellow kiwi jelly, and yellow kiwi ice cream. An interesting selection of local and regional wines is available.
