A cool, lively address in the hypercentre, led by an inspired and professional Yoren Larger. The dishes on the slate blend classic techniques with contemporary ideas, all in balance: a revisit of celeriac remoulade with crab, apples and gel, a declension with Mornay sauce and Parmesan tuile, lamb chops with spice and honey jus, grenailles and carrot cream, or mini-financiers, pomelos and pepper mousse. Smiling, engaging service.
