Chef's Restaurant Tan Dinh, 45 years after Robert Vifian's arrival, remains a Parisian landmark, at the highest level of Vietnamese cuisine, at the highest level of an ancestral cellar and distinguished service. Even today, the not-so-expensive experience deserves to be savored in this slightly old-fashioned atmosphere, on a menu that is ultimately very contemporary: Vietnamese ravioli with smoked goose, cold duck and kumquat rolls, red mullet with lemongrass, veal fricassee with spices... We finish with a traditional banana or pineapple flambé.
