It's an artist's cuisine, even before it's an artisan's cuisine, played out in a formalism to the last detail. Here, the plates themselves are designed by chef Ippei Uemura, the compositions express a rare sensitivity, and the cultural fusions depend on a conceptualization that explains the elegance and identity of the table. In his "voyage" menu, the chef imagines a harmonious round-trip between Japan and Marseille, using local produce and rigorous know-how. Discover shime saba mackerel with cocoa mousse and nori tuile, red mullet tempura, eryngii, buckwheat noodles with green tea, yellowtail sashimi with shiso, salsify and nakaochi tuna tartar, stewed beef fillet with seasonal vegetables and gherkin sorbet, or char-grilled bass with seaweed jam and mushroom velouté.
