Ippei Uemura continues to teach us about traditional Japanese cuisine with a contemporary Marseille twist, and we happily follow in his footsteps. In this attractive dining room above the vallon des Auffes, he offers each service an initiatory recital as engaging as it is seductive, based on a selection of ingredients (langoustines "autour du jardin", yellowtail sashimi, oyster ponzu hassun, sea bass, mackerel squid..., yuan yuzu-style pagre, monkfish with binchotan...). Add to this contemporary setting a collection of earthenware for plates, sauces, saké... found here and there during his many trips to his native land, and you're sure to find yourself in Ippei's world.
