Between the Santé prison and the Cochin hospital, it's worth keeping a smile on your face: a self-taught chef from Alsace, Justin Brohm, invites you here with his creative cuisine. No long menu, just a choice of two starters, two main courses and two desserts. You'll be delighted by sea urchin tongues delicately placed on a chestnut cake and a revisited sauce vierge; red mullet, pickled sea bass roe with a garnish of kombu seaweed, pomelo and carrots, and a marine sabayon; a melting suckling pig and its Brussels sprouts confit in honey and soya stuffed with romanesco cabbage purée and lemon, all drizzled with a meat jus made with buckwheat butter. For dessert, the tartar and sorbet of pineapple, mango, passion fruit and lime is complemented by a white chocolate-sweet potato-madras curry ganache. To accompany this cuisine, an attractive wine list includes a VDF Les Terres d'Ocre, a tressallier that brings freshness and minerality. Attentive service.
