Chef's Restaurant Chef Philippe Ramon's restaurant is evolving very well, with the chef demonstrating mastery and technique in all areas, using seasonal produce, presentation and harmonious flavors. Despite a set menu, the chef opts for a simpler cuisine, focused on the essential, without too much pomp and circumstance. The playful side will amuse children ("guess what you've just eaten") and annoy others, on a predominantly plant-based theme. A fine work on butternut squash, after a beet and fish starter, interesting combinations through to the excellent dessert of grapefruit, stracciatella and madeleine. The cellar is beautiful, a generous mouthpiece for local estates and, more broadly, for the different terroirs and appellations of Languedoc. Pleasant, friendly service. Two toques this year, with the hope of quickly coming of age.
