Chef's Restaurant Passion and talent come together at Sylvain Renzetti's. He's making steady progress and, we hope, will not fail to achieve three toques soon, as one of our interviewers this year suggested. This young chef likes to surprise us, even if it means blowing up the setting of this pretty restaurant with its moldings and ceiling canopies. The tasting menu has risen €10 in a year, to €75 for five courses: oyster asparagus kiwi and cucumber tartare, swordfish ceviche leche de tigre sweet potato and passion fruit, low-temperature julienne bisque espuma, veal picanha beet salsify cherry jus, which we also tasted last year with a lavender sauce. The service is precise and of a very high standard, and the cellar is interested in all the vineyards.
