Over the past six years, Signature has taken a special place in the local landscape, and we come here to discover the constant evolution of a blind experience that entertains customers and awakens our senses. Damien Franco and his team take great pleasure in renewing and reinventing their menu twice a month, scrupulously following the seasons and taking great liberty with sometimes bewildering combinations. Diners are given the choice of knowing what's on the plate or guessing the different flavors concocted by the chef. Elegance is also the watchword here, both in the recently redesigned decor and in the care taken with the often graphic and light plates. Pear accompanies the scallop carpaccio and its airy Jerusalem artichoke siphon, the respectfully-cooked pollack is surrounded by pickled or compote cabbage, and the Gers poularde, worked as a soft filet or in brick pastry, is explosive on the palate and carried by an orchestra of vegetables, each with its own signature taste. Simplicity is not an obstacle to great technique, and the chocolate dessert is no exception. The wine list is growing and the catering service is expanding.
