Mangalica ham, chipirons serrano artichokes, piments del padron, Spanish-style hake, octopus à la gallega, lamb sweetbreads with porcini mushrooms and ewe's milk cheese for a virtuous and delightful tour of the country. Irouléguy, txacoli de Getaria, rioja in the glasses.
