Asaf Granit and his teams have launched multiple concepts across Paris, but Shabour remains the ideal laboratory, the festive broth that sets the tone for totally free, wildly inventive Mediterranean cuisine, to the point where it's hard to see what the day's sequence is made of, even after you've tried it. Orchestrated by a DJ mixologist, the fragrances, tastes and beautiful products in a myriad of herbs and spices, shellfish, fish, meats and vegetables make for an exhilarating farandole, all the more so as the animation around the counter and around the bustling brigade, supported by the music, is always in fusion.
