Chef's Restaurant In his new setting, a vaulted tufa room in the historic Doutre district, Nicolas Adamopulos, formerly with Christopher Hache, transports us to a world where the product is self-sufficient through uncluttered work, where flavors are legible and tastes assertive, in the comfort of a set menu that restricts the customer's freedom, but increases that of the chef; cabbage cut from the heart is braised with a sweet ginger cream, precisely measured and produced just a stone's throw from here; scallops mingle with celery chunks, bard sauce and Venus navel; pigeon lacquered with beet juice and offal confit make up a plate of artistic burgundy red; desserts are on a par with the three toques, with an astonishing white sweet potato purée on a delicate honey ice-cream before an extraordinary quince mille-feuilles with Tonka bean ice-cream; a cuisine of flavors, clean, precise and without artifice, revealing the intelligence of the approach through mastered technique; the wines are selected with the same rigor, the staff are attentive in a soothing atmosphere.
