Chef's Restaurant Discovered by Gault&Millau, Nicolas Adamopulos, who worked with Christopher Hache and Éric Frechon, surprises us more and more every day with a cuisine in which research is constant. His dishes are first and foremost the fruit of intellectual construction, before being executed with mastery and precision. Products are delicately worked to preserve their authenticity. Some dishes are up to the level of the 3 toques, like the astonishing yellow pollack, creamy bear garlic, which you sniff at the same time in a glass jar, playing with your gustatory and olfactory senses. From the amuse-bouches to the mignardises, including candies made from recycled coffee grounds, everything is highlighted with finesse, and you can feel the passion and talent. One more point this year.
