The friendly thirty-something Séverin Aymard, who originally held a degree in finance, quickly transitioned to becoming a full-time chef. After traveling extensively (New Zealand, Australia, Canada…), he returned to Toulouse to open his own restaurant in the Saint-Aubin neighborhood in late 2024, naming it in honor of Francis Cabrel, whom he admires. Like his idol, he’s humble and and unassuming, but his dishes pack a punch in an inspired “bistronomic” style—whether for lunch with an incredible €24 set menu that’s all the rage among nearby offices, or for dinner with a six-course surprise menu reasonably priced at €47. Particularly memorable from our last spring dinner were a “trout with sorrel, peas, fava beans, and wild asparagus,” as well as a stunning “shredded pork and lamb with red cabbage, fried artichoke, and kimchi.” Ultimately, the restaurant is on par with its two-toque rating, thanks in particular to its original approach to spices, acidity, and smoky flavors. Add to that a natural wine list that’s extensive and affordable, an attentive staff (the chef, in fact, regularly pitches in in the dining room), a young and pleasantly trendy atmosphere, and a fresh, stylish setting: all of which contribute to the well-deserved success of a spot where you simply feel right at home.
