La Flibuste is no more! A chapter has come to a close after many wonderful years during which Roger Martins treated us to some memorable dining experiences. Now it’s time for the next generation to take up the torch at this renowned establishment, known far beyond the seas and oceans, with Enzo, one of the chief buccaneer’s sons, who has chosen to set sail for South America with SAM (named in honor of Roger’s wife and granddaughter). Latin music blaring from the speakers and decidedly gourmet dishes: sea bream ceviche with leche de tigre, cassava croquettes with black truffle, seared rock octopus, and purple corn mousseline topped with an anticucho sauce (demiglace), barbecued chicken thigh, which pairs perfectly with smoked mashed potatoes, crackling cabbage with cocoa and passion fruit caramel… An impressive wine cellar and signature cocktails, with a tasting menu for €49.
