Gault&Millau's review 2026

In the spring of 2024, Florian Gat and Clémence Specht handed over their restaurant in the Halles Saint-Louis district. They had made it a popular spot for lovers of sincere, well-crafted cuisine, good food and conviviality. Guillaume Rozec has since taken over the keys... without any change of scenery, since he was already working in the kitchen. Naturally, the dining room is as welcoming as ever, with a bistro-style decor that perfectly matches the philosophy of the place. Freshness, simplicity and efficiency are the hallmarks of the frequently renewed menu, which features 3 starters, 3 main courses and 2 desserts. As a prelude, just-snacked beef marries well with mashed potatoes and spinach, all enhanced by notes of Savora. Potatoes are prepared in thin, melting slices and refreshed by a small salad of crunchy cabbage to accompany the fish "of the moment" topped with a light sauce. As for the banana, it intrudes before the end of the meal in thin caramelized slices on a creamy, fragrant base. The service is eminently invigorating and friendly, but this time we found it a little less forthcoming about the wine than in the past. In this respect, the cellar is not lacking in assets: menetou-salon from Van Remoorter, pic-saint-loup from Mas Foulaquier, riesling from domaine Pfister, jurançon from domaine Bru Baché... Wise prices.
