In a pedestrian alley near City Hall, this is one of the restaurants to watch, where the young couple, Samuel Fontaine and Claire Lefort—who previously worked at Florent Ladeyn’s restaurant—are now embracing local and organic ingredients to create a seasonal menu. Admittedly, the trendy ideas are there—grilled octopus and pavlova to set the tone—but there’s an undeniable personality to these dishes: gravlax of Arctic char with raspberries, cucumber, and blackcurrant leaf oil; rack of veal with herb-infused hollandaise sauce, strawberries, and a variety of tomatoes with sweet clover cream—all part of a menu that, at €65, isn’t cheap, but is crafted with care and attention.
