It's one of the few seaside restaurants still open in the off-season, offering gourmet cuisine in a bright, contemporary setting. Tom Cariano's address is a chic rendezvous away from the city, equally suited to a terrace lunch or a business dinner. The €55 menu is ambitious, with its perfect egg and chanterelles, cream of mushroom and onion confit, pan-seared scallops, hazelnut risotto and saffron cream, half-lobster and chicken leg ballottine, poached pear and thyme-roasted clementine, almond crumble. Solid cellar with fine references, including Château Simone, Vincent Girardin, domaine Ott, domaine de la Bégude and domaine de la Janasse.
