Remarkable Restaurant

The handover from Philippe Brun to his son Clément is now fully complete, although, of course, Philippe still pops into the kitchen from time to time—as much out of nostalgia as to make sure everything is under control. He needn’t worry—with Clément and his wife Camille at the helm, the family business is in good hands, especially since Michelle, Philippe’s wife, continues to oversee the dining room with passion and professionalism. And since Clément officially took the helm, it seems to us that the restaurant has regained the vibrancy we sensed a few years ago, back when it briefly held four toques. Clear, grounded, indulgent, and elegant, Clément’s cuisine draws inspiration from his many travels (particularly in Asia) and from the Auvergne region he loves so much. The green asparagus is grilled and crisp, skillfully paired with a creamy fir-scented sauce; Bohemian morels (a cousin of the morel) transport us to the heart of the surrounding forests and are served with a delicious Cantal cheese soufflé and a Vin Jaune emulsion; the Arctic char is delicately confit and paired with Swiss chard, a sesame-ginger sabayon, and lemon-scented kasha; and the tender Lozère lamb is served with shiitake mushrooms and carrots in various textures. Desserts in the same spirit, created by Camille, with friendly and professional service under the direction of Michelle Brun, who oversees a wine cellar curated with passion.
