For the past fifteen years, this native of the Drôme region has brought this pretty market table to life on the banks of the Galaure, in a soberly decorated room where local products take pride of place. The ideas are interesting, particularly in the very competitive €24 formula, with mustard-marinated lisette, steamed matcha tea fish and vegetables, beef pear, shallot and red fruit juice, delicate potatoes, or coconut soufflé, chocolate passion fruit coulant.
