He's one of the darlings of the Parisian scene, embodying, along with a few others, a rising generation that (fortunately) didn't always make it to TV. Coveted by Christian Le Squer when he was still at Ledoyen, pampered by Christophe Moret whom he followed to Lasserre and then to Shangri-La before being hired as chef at Loiseau Rive Gauche, this chef of Egyptian origin (a country to which he winks with the karkaké, a traditional drink from his country that he serves to every customer) has perfectly assimilated the codes of French cuisine, to which he delivers a vibrant, and quite brilliant, tribute with every dish: after the beautiful trilogy of amuses bouches (the cuttlefish was magnificent), the dishes follow one another, sometimes at the level of the three toques, like the magnificent sea urchin au naturel, coral lentils perfumed with cumin, which wakes you up with its unctuous power, the lobster "à la Dhiab" or the superb dessert based on chocolate, lemon and cayenne pepper, sometimes a little behind, as with this mature chuck of beef, simply grilled, but which takes too long to chew. Still, it's an exciting moment, even if deep down we're convinced that it lacks a hint of madness and risk-taking to win a third toque, which is bound to come our way eventually. Smiling service, at ease and in perfect tempo, excellent bread from Lalos served with lovely Thierry Lemarchand butter, a plethoric and logically priced cellar, covering all French regions and beyond.
