Chef's Restaurant Omar Dhiab has conquered the capital - the elite, the influential, the twelve who count - in no time at all. It has to be said that the former Loiseau Rive gauche alumnus has done just that, establishing a modernity firmly rooted in its fundamentals, within reach of the imagination and the fork. Impeccable products, impeccable cooking and a soulful touch in every preparation: tourteau de casier with carapace juice, coral lentils with cumin, Rex rabbit cooked from head to toe with Croisic seaweed and tangy cooking juice, Sicilian pistachio and pink grapefruit for a meal of very good taste, nicely priced at €68. Already signature dishes (lobster "à la Dhiab") and three fine Dégustation menus at €118, €148 and €168. An inspired cellar with the finest vineyard produce and a few choices by the glass offered by the good sommelier team (from €15 to €25).
