We can only congratulate Maximin Hellio, in the not always easy context of Deauville, for having stabilized his house and won the loyalty of his clientele, around a gastronomy that may not be as adventurous as in its beginnings, but is well worthy of the three toques he proudly wears. In this handsome, contemporary setting just off Place Morny, he has developed a chef's style of cooking, based on noble products used to good effect: smoked oyster tapioca soufflé, spider crab and sorrel, pollack broccoli miso blanc, local lamb with peas and tarragon jus. The style is precise, the atmosphere elegant, and the chef's ease is evident throughout the house, right down to the desserts. To broaden the spectrum, he offers introductory lunch menus at €29 (two courses) and €55 (three courses). The cellar is quite classic, but extensive, with a number of fine bottles.
