Remarkable Restaurant In less than ten years, Maximin Hellio has refined his approach, built customer loyalty and adjusted his focus. That of well-understood prestige, of imposed hidden menus, of the note of caviar available to embellish the meal, of small attentions for a Deauville public sensitive to luxury brands. The chef remains a sure bet, both in his choice of produce, often local, and in the finesse and accuracy of his treatment. The place is comfortable and intimate, the service is top-notch and the cellar offers some fine classic references.
