Remarkable Restaurant Mathieu de Lauzun is a lucky man, and so are his customers, in the midst of nature, close to the vines of a remarkable terroir. This former winegrower's house, superbly fitted out with a blend of tradition, space and contemporary architecture, creates a very elegant atmosphere, with impeccable service, in the right tone from start to finish of the meal. This flawless service, with its meticulous attention to detail (the bread from the former pastry chef based in Gignac, for example), is sure to set off fireworks. And if, as is too often the case this year, we regret the absence of a menu that allows us to control our enjoyment, we did come across some remarkable dishes, especially at the start of the meal: with trout from the Basque country in two preparations, one marinated in rice vinegar, Chinese cabbage soya miso wasabi fish egg salad, the other smoked, gribiche condiment, black garlic peanut emulsion ; with poultry pastilla with oriental spices, the chef's homage to his grandmother from Casablanca; with monkfish from Brittany roasted Burgundy-style, mushroom cannelloni, carrot pulp, shiitake and crispy onion, red wine sauce, a remarkable cooking, an ideal marriage. We weren't quite as enthusiastic about the rest of this experience - that's the problem with set menus - in the matured beef with salsify or the carrot cake for dessert (you'd better love carrots). What remains is a very positive impression, especially when the excellent sommelier starts to pull out all the stops with a remarkable and attractive cellar.
