In the midst of some of the region's most prestigious vineyards, Matthieu de Lauzun shines. The house is beautiful, and the distance he has covered since Gignac, since we have been following him assiduously, is something to be proud of. He has imposed his style, won over his clientele and, in this room with its rough stone walls of great contemporary purity, he builds his hidden menus (4, 6 or 7 courses from €98) on the inspiration of the moment, the season and arrivals. Well-constructed plates, the right tastes, without adventurism, simply respecting the product. A good idea "for drivers": the wine pairing is offered in half portions and at half price.
