After a solid career in the finest establishments, notably the Scène Thélème, Bordeaux-born Pierre Rigothier decided to move to the countryside, to rediscover the taste of time passing, and the pleasure of a family life away from the city. This soothing return to his roots is expressed in his dishes, which return to the essentials, to childhood memories and to a love of the product, which permeates the entire meal and is embodied in these fine local recipes. On the menu: a fine country terrine, pan-fried ceps with Aldudes ham and parsley, poached monkfish with red cabbage and iodized cream, veal breast with sautéed rice and blanquette sauce, Montbéliarde beef rib with grenailles, bourdaloue pear tart. A fine cellar with a dominant Bordeaux style.
