Gault&Millau's review 2025

The Hôtel des Gorges du Tarn has a calm, family atmosphere, like an elegant guesthouse where you can prepare for long treks. The cuisine is both contemporary and solid enough to face nature: trout filet with piquillo coulis, venison stew with vin du pays d'Oc and porcini mushrooms, lamb gambette confit 12 hours with thyme jus. As with the fine regional cheeses, we'd love to see a few country charcuteries on the menu, in this welcoming, well-kept home, with its attentive service.
