It's a friendly family-run guesthouse in one of France's most beautiful villages, as much for its breathtaking nature as for its architectural charm. Between two walks, you can sit at Martial Paulet's table, faithful to his terroir and serious in his execution, opening his work with an open raviole of Cévennes pélardon with chestnut flour and mushroom cream, a pan-seared fillet of sea bass, thinly sliced leeks with chestnut and leek cream, a fillet of wild boar marinated in soy, balsamic vinegar and honey, butternut and hazelnut purée, a nougatine glazed with porcini mushrooms on a chocolate dacquoise.
