On the outskirts of Saverne, this beautiful family home is the setting for an adventure begun almost a hundred years ago by Yves Kieffer's great-grandparents, and continued by him and his wife Béatrice since 1999. Having worked at the Tour d'Argent and with Marc Meneau, Yves Kieffer is a seasoned technician, bringing together all the terroirs of France in his dishes, and occasionally summoning up his love of Alsace for memory's sake. It's a beautiful panorama of the season, New Caledonian blue gambas barded with peasant bacon, grilled avocado and wasabi passion sauce, red mullet marinated in chermoula and cooked on the grill, Basque-style fregola sarda, spicy tomato coulis and bone broth with tomato butter, a Vosges quail stuffed with sweetbread and chard grattons, corn and chanterelle tacos, pomelo gel and carcass jus, a peach and fennel dessert. An excellent cellar, mainly devoted to prestige wines.
