Remarkable Restaurant What's the most urban address on the Alsace wine route? Without a doubt, Sandrine and Julien Binz's restaurant. The beautiful wall fresco featuring a detail from Fragonard's "La Fontaine d'Amour" sets the tone, and seems to extend into the dining room, where the play of light and shadow is enhanced by the Napoleon III mirror and tasselled sconces. No expense has been spared on gilding in this restaurant-lounge, but what really shines is Julien Binz's accomplished cuisine, with its ambition intact. This former chef from Armes de France and L'Auberge de l'Ill offers a creative and subtle approach that becomes increasingly sophisticated with each passing year. His dishes are lively and contemporary, and pay tribute to local producers, such as this trout in two versions by François Guidat, which whets the appetite. The cuisine collects the region's products, without missteps, between terroir and trend: the pike-perch stuffed with Alsace sauerkraut in striped print reveals a stunning aesthetic. The "Terroir d'Alsace" lamb in two preparations is a dish with a traveller's soul, with meltingly tender ribs and shoulder confit with a discreet oriental flavour. The desserts are increasingly structured and aesthetically pleasing, like the rose, a subtle nod to Pierre Hermé's Ispahan, with raspberries and lychee sorbet. Although the recommendations are somewhat uneven, the collector's cellar, which is growing over time, pays particular attention to Alsace wines. Julien Binz's restaurant is the very embodiment of the Alsace that moves and succeeds.
