Prestige Restaurant It's not sadness that should dominate, but the joy of experiencing the ephemeral and eternal beauty of life, of enjoying its benefits, of sharing the best. For thirty-five years, we have been lucky enough to follow the career of a culinary genius whose influence is not about to fade away. In the wake of Jean-Luc Tartarin's sudden departure, the only watchword for both Annabelle and chef Valentin Vabre was to continue this panache-filled ride of excellence and rigor. Today and tomorrow, Maison Tartarin must shine. The chef was unique, but he was also a mentor who passed on his passion, high standards and refinement. Today's customers taste Tartarin in the text, and the entire brigade is focused on the goal: the just-stiffened langoustine is always magnificent, with its corn mousseline with marine plankton and lemongrass, as is the sweet-spiced saint-pierre with cauliflower semolina, carrot syrup, orange and turmeric. The extreme quality of the products remains unchanged, as with the farm-raised lamb au sautoir with herb polenta, and the Bourbon vanilla millefeuille remains a must among the desserts. The extensive wine list for connoisseurs, the hushed atmosphere of this major regional house, the well-paced service coordinated by Annabelle Tartarin, and even more attentive to everyone's pleasures, all help to keep us on course for this indispensable lighthouse.
