Prestige Restaurant The room is full, the blinds down, the atmosphere intimate. And the contemporary elegance of the place doesn't overshadow the art of entertaining. This is Annabelle and Jean-Luc Tartarin's place, not a mechanized catafalque. The chef is master on board, and everything is orchestrated naturally around the plates of the moment. The sea is in charge: scallops in winter, lobster in summer, in clever seasonal variations, and above all with magnificent produce. For example, lobster carpaccio, lightly enhanced with kalamansi and nasturtium blossom; large langoustine, not "licked by the rosemary embers" according to his signature dish, but in another remarkable version, barely cooked on a sakura cherry leaf with tagetes and old soy broth. The red mullet, exceptional for its raw-cooked cooking, on a film of ventrèche with a creamy razor clam caviar and Nice lemon, is a timely reminder that Tartarin is indeed the Norman Passedat, i.e. the best connoisseur of fish, flesh, texture and the art of cooking. This impression is confirmed a little further on by the sea bass, dressed in a creamy haddock zucchini flower, resonating with a personal, uncluttered cuisine, the culmination of decades of exacting standards and perseverance. Seasonal desserts in the same vein (red fruit syrup rhubarb "sorbeted" marshmallow poppy). A powerful cellar, with beautiful verticals and the right references everywhere, modernity, a lively list that evolves and lets each current express itself (we can therefore forgive a relative lack of interest in Alsace or Savoy, so remarkably well represented are the other regions), at prices that also allow wine-lovers to find a great bottle for their budget.
