Remarkable Restaurant A legendary house for a chef now known and recognized throughout Alsace. Eric Girardin can pride himself on having succeeded on all fronts, including reviving the brasserie spirit of this historic residence, while developing his gastronomic table to a very high level. We salute both his hard work and his attachment to a terroir he knows so well how to magnify. An excellent five- or seven-course "Sensitif" menu (with two vegetarian dishes) shows the inspiration of the season, with foie gras en terre et mer with vine peaches, trout en deux actes with herb sabayon, entrecôte steak honed to perfection in meticulous preparation, and quetsches d'Alsace sweetened with cinnamon and gewurztraminer. A remarkable, opulent cellar from a true wine lover.
