Chef's Restaurant In the heart of Aubrac, Gilles Moreau's hotel-restaurant combines ancient and modern with a fine sense of balance, celebrating both medieval and contemporary styles. The sleek lines of the restaurant conceal its gourmet credentials, which are firmly rooted in the region and celebrate local produce. Meats are obviously on the menu, with pan-fried Aubrac beef from Conquet, red wine reduction with shallots, seasonal vegetables, celery purée and aligot, and Aveyron veal served rosé, reduced juice with Timut pepper, potatoes stuffed with fresh tome cheese and seasonal vegetables. And let's not forget some lighter ideas, such as shrimps sautéed and marinated with lemongrass, pig's trotters with satay, coleslaw and miso sauce, or apricots compotée and brûlés, praligrain crisp, 70% chocolate cream and yoghurt sorbet.
