Chef's Restaurant The Grand Hôtel de Laguiole is a gateway to the terroir, showcasing its riches and gourmet delights, reflecting a tradition that Gilles Moreau is determined to uphold. À la carte: summer truffle, raw marinated garden zucchini, shavings of dry-cured ham, veal with oyster mushrooms in parsley and reduced jus, pressed potatoes and seasonal vegetables, supreme of guinea fowl roasted on the skin, prune jus, roasted sweet potatoes and garden vegetables, Yannick's peach poached with melilot flower, fromage blanc mousse, crispy tuile and meadowsweet ice cream. Formulas at €49 and €69.
