This is a gourmet stop in Aubrac, a veritable feast of a place where it’s a pleasure to stop and enjoy the warm hospitality and the cuisine of Gilles Moreau. A genuine inn just the way we like them, with a genuine, inviting, and varied menu dedicated to regional products, prepared in the chef’s signature style: confit pork shank and ear, served as a millefeuille in a terrine and as a Grenoble-style carpaccio; Aveyron veal with oyster mushrooms in a parsley-garlic sauce and a reduced jus made from potatoes and vegetables with ham; plum tart with mascarpone ice cream, almonds, and caramel coulis—or you might be tempted by the famous Laguiole cheeses—all part of an excellent set menu for €54.
