Mickaël Pelletier, who was second-in-command when the auberge was taken over in 2012, became head chef this year, and continues valiantly to perpetuate Monsieur Paul's (Bocuse) original idea of turning it into a top-of-the-range brasserie, geared towards grand bourgeois cuisine, with pan-fried foie gras pain d'épice, quenelle with lobster sauce, scallops and risotto, poultry with morels.... Among its cousins, this is the establishment where you'll find the most expensive menu, at €56. A little out of the way, with its garden and popular terrace in summer, it offers a cosy, hushed atmosphere. Some welcome work has soundproofed the room, which was initially noisy, to make way for a calmer atmosphere. The juices are there, so are the customers, and the service is always well managed, whatever the staff. Who is capable of doing this in France in a dozen establishments where menus range from €30 to €50? No one can.
