The cuisine tries to bring together the ideas of the moment, a bit of tradition, a bit of the region, a bit of fashion, to create a pleasant, contemporary menu: shrimp flambéed with whisky and celery puff pastry, squid steak with maître d'hôtel butter and wild garlic, pork steak in a chorizo crust.
