Prestige Restaurant For all investigators, there's always a particular excitement before visiting David Toutain's restaurant: discoveries, ideas, sensibility, the chef is never stingy in these matters and everyone knows in advance that the moment will be singular. Push open the door of this discreet façade on the quiet Rue Surcouf: the universe is already in place, the welcome is distinguished and puts you in a confident mood. All that's left to do is unwrap the program, which is bound to be unexpected and seductive. The flurry of seasonal appetizers starts with a bang, like Aïda's trumpets, often vegetal and marine (mussels squash, saffron, oysters kiwi coriander...).), the dishes follow one another in harmony, yellowtail on Pontoise cabbage and mint, shellfish with onions and quince, celeriac grown by a presentation of noble rusticity with chestnut, cod and artichoke, before running into the fields for the potato and cocoa hare. This farandole is both graceful and energetic, with jolts and well-being for a consistently captivating experience, right through to the equally unexpected desserts (lemon mertensia olive oil, Jerusalem artichoke churros, mayan red (cocoa) and sweet clover...). The cellar is just as removed from the overcrowded vineyard aisles as it is from the aisles of other discoveries, and the service is just right, young and committed.
