Prestige Restaurant The hidden dinner menus offered by David Toutain are €248 and €298, the prices being the only indication given by the house. So this is a restaurant for insiders who know what they're looking for, a brilliant chef in a refined setting, fine dining in a reputed place with all the canons of the trend. Vegetables are the main focus (menus are titled with herbs such as hogweed, meadowsweet and ground ivy), which fans of Marc Veyrat, of whom David Toutain was a very good pupil, will easily identify. The appetizer snacks follow one after the other, varied and technically sound, settling you into the world of the 4 toques (a special mention for the spider crab tartlet). After the appealing ballottine de chou, we move on to the second with the tomato confit with watermelon, a super punch of sensuality for late summer, lunchtime at the zenith. The magnificent Cherbour salmon, with its collagen like chive butter, could almost do without bell pepper, and the cep on a meadowsweet cream renders the forest in its entirety. A very harmonious, gourmet dish, before the monkfish, zucchini flower and zucchini velouté, a little carried away by the verbena and nasturtium leaves, the superb grilled lobster, head and grapefruit soup, claw with tetragone, the black sesame smoked eel granny smith as an "emblematic dish". Technical excellence is not forgotten when it comes to the goji berry pigeon with chanterelle crumble, while the honey fig and sweet clover dessert is a little more timid. The team as a whole is young, lively and at ease, and in keeping with the style of a grand house, the wine list is intelligent and pleasing to all. Well-crafted conventional wines, with or without labels, a bit of nature, accessible bottles and great labels at great prices but without bloat, very pleasant vintages to find (Tempier 2015 and 2016 in white, Roc des Anges white 2014 and 2015 at €55 and €105), all served by a new sommelier who loves to play.
