In the south of Touraine, wedged between the Vienne and Indre rivers, La Promenade - Maison Dallais cultivates a rare loyalty to the family spirit. From Jacky to Fabrice, now joined by his son Clément, three generations have taken their turn with the same exacting standards and the same attachment to the terroir, making the house a true story of transmission. In the dining room, Isabelle Dallais embodies this continuity, while Xavier Fortin, present for thirty-eight years, acts as a link between the eras. The impressive cellar, patiently built up over the years, is one of the restaurant's great assets: chiseled pairings, carefully selected Loire wines, and a few brilliant Burgundy escapes, such as this dazzling Savagnin du Mâconnais or Emmanuel Rouget's marvellous Savigny-lès-Beaune, with its expressive length. In the kitchen, technical mastery is never lacking. The mushroom appetizer plays on textures, from airy warm brioche to a jelly-like blanquette sauce. The Racan poultry, of a rare quality and cooked with precision, is accompanied by a cabbage stuffed with foie gras and a generously buttered purée, in an assertive register of bourgeois tradition. Desserts, such as a tiramisu-style rose with cherry and chocolate-coffee, bear witness to a solid savoir-faire. The impeccable quality of the products and the rigor of the gestures make for a seductive whole, but they also reveal a culinary aesthetic attached to its own codes, where freshness and acidity could provide more impetus. Buoyed by a living legacy and a remarkable cellar, the house retains a strong identity and consistency that are reassuring.
