At the helm, Bas Holten, who spent two decades at Château des Merles, creates a free and spontaneous cuisine, inspired by the season, the market and the inspirations of the day. The dishes, cooked on site in controlled quantities, reveal a quest for harmony between finesse and local roots. Dutch-born chef Bas Holten's approach is to combine local produce with techniques from elsewhere, with a precision of gesture that magnifies without masking. The menu is constantly evolving, designed with a circular economy in mind, limiting waste and promoting responsible supply chains. In the dining room, Lissy Holten deploys a warm aesthetic, where antique objects create a lively decor. The terrace overlooking the river, dotted with mismatched crockery and weathered furniture, becomes the stage for an experience of its own. Every detail celebrates the moment, every service a dialogue between the environment, the craftsmen and the guests, a moment suspended along the Dordogne.
