Just outside Reims, Benoît Mérot's restaurant is one of the most interesting in the area, for its ultra-contemporary approach (see the all-white dining room, with its Scandinavian-style light wood furniture), and its very limited menu, which favors first-hand products and the seasons as its compass. The result is two well-constructed menus, at €36 and €53, where the graphic, meticulous plates demonstrate a fine savoir-faire: Rémi Gozé asparagus, green tea, perfect egg; crab, peas, olives and lemon, the return of the peach with carrots, rhubarb and radish, the sweetness of apricot, fennel and vanilla.
