Remarkable Restaurant Last year's Gault&Millau d'Or is in the spotlight everywhere, and we're delighted. A true soul of Normandy: in the kitchen and the mill, in the kitchen and in public life, he shows talent and empathy, a capacity to please and success through work. An exemplary professional who spreads the word to his teams. In the dining room of this fine establishment, which he has renovated and arranged with his wife Cécilia over the years, everyone feels at ease, old friends and visitors alike, attracted by the aroma of the three toques: spider crab under a veil of cauliflower cuttlefish and caviar, with smoked cauliflower milk, pigeon on the bone in a crusted leg confit beet in a salt crust with peaty juice, raspberry pistachio Normandy gin for a lovely dessert that closes a sequence that is at once technical, gourmet and attached to its region. A pro cellar that shows a keen interest in all regions, combining young winemakers with established names, dedicated and well-paced service.
