Remarkable Restaurant Arnaud Viel is in luck: he has hit the winning ticket with a very promising young second-in-command, his own son Arthur, trained in some very fine houses and now back in the fold. Argentan may seem like a retrenchment, but it's a stroke of luck for him, for the house and for the region: the terroir is magnificent, the competition reduced, and the rejuvenation sounds like a Renaissance. The chef will also be able to get rid of the chabada, which is still a little heavy, the over-presence of prestige products and the ceremonial at the table, with recitations of producers and ancestral references. Because there's cooking here, and very good cooking, with taste, sharp seasoning and good ideas. The Trouville whelk alone among the appetizers sets the standard, as do the melon and bouchot mussels, which are a perfect match; the land-sea associations also work very well, as in the case of the excellent hot foie gras escalope with a very good lovage broth and supple abalone, the same quality of broth on the langoustine in two courses (the second, raw, with a lemon leaf decoction). A moment of great gourmandise with the trout like a cake, soft and topped with osciètre, before the lobster, very well cooked "in its ecosystem" with chanterelles and almonds, the pollack, cooked confit with milk, shellfish and celery sweetened with lightly buttered bones. A fine job again on the squab, supreme roasted on the bone, thigh confit before the very good fennel raspberry olive oil dessert. A varied, serious and well-constituted cellar, a little expensive on the smaller appellations, but interesting on the bigger ones (around €300, you're getting exceptional wines for a grandiose celebration), and a choice of around ten glasses.
