Renaldo Calavetta's speciality is soufflés as appetizing as they are beautiful, carefully assembled and delicious. Here's a show, dishes presented under cloches, to be discovered and savored, including when they contain noble ingredients such as lobster, scallops or sweetbreads, or when they adopt a specific theme such as undergrowth with cepe mushrooms, chestnut flour, mushroom cream... For lovers of more traditional cuisine, the chef once again demonstrates his savoir-faire, offering fragrant ceviches, plancha scallops or veal kidneys. A warm welcome from the chef's wife, and a short regional wine list.
