Remarkable Restaurant It's an old lady of the Latin Quarter, wise and elegant, with a timeless class, to which we return with the certainty of goodness and professionalism. After greeting the portrait of the young King Louis XIII, we rediscover the splendor of a room with a medieval air, solid wood, beams, stone, carpet and colored tiles, where the former chef of the Tour d'Argent, Manuel Martinez, gives a demonstration of great gastronomy. The signature menu rolls out its classics: Lucullus-style veal tongue, spiced mango chutney and toasted bread, Breton lobster roasted in semi-salted butter, creamy bisque, milk-fed veal sweetbreads and Mr. Yamashita's komatsuna, mustard seeds, Bresse poultry, vegetable fricassee and yellow wine emulsion, a lightly puffed chocolate tartlet and vanilla ice cream. An exceptional cellar.
