This Saintes-based establishment focuses on relaxation in this serene, wooded setting. The dining experience has also adapted to the times and its surroundings, featuring a clear, appealing, and well-executed menu: butternut squash cake with foie gras and oysters, Gensac trout with pointed cabbage and blueberries, pigeon with portobello mushrooms, hazelnuts, and pear, served with corn and pine cone ice cream. The dishes are featured in a well-curated three-course seasonal menu for €74. The service is of a high standard, and the classic wine list is complemented by a selection of cognacs.
