The chef's simple cuisine oscillates between French tradition and Asian inspiration, always with the right touch. On this late spring lunchtime, from the quiet terrace just a stone's throw from the river: flaked skate wing with lime, creamy coral lentils with coconut milk, fennel salad, Vietnamese meatball sandwich with tomato sauce and coriander, and to finish, a deliciously regressive rice pudding.
