A classic of our Champagne stops near Laon, this solid establishment never disappoints. Chef Jean-Yves Collier knits together a well-maintained tradition, and while we appreciate his efforts to modernize here and there, it's on the safe-haven dishes that we delight: roasted scallops with royal orange butter and asparagus tips, turbot back with champagne sauce and celery mousse, fillet and rack of lamb with caramelized onion sauce and wild garlic purée in a fine €58 menu, rounded off by a red fruit gratin with champagne sabayon.
