There are as many languages as there are ways of cooking in this great country of India, as Sanjit Rajak explains to us. Since 2019, he has been based between République and Père-Lachaise, after a richly rewarding American experience (two restaurants in Florida). Helped by Vindilla, he reproduces recipes learned from an Indian chef in Bombay and Calcutta, his birthplace, but also in other regions visited during his travels in the land of a thousand "Rang" (in Hindi) colors. In a chic yet cosy atmosphere, between tradition and innovation, you'll enjoy butter chicken, the house best-seller, or steamed ravioli, reshmi chicken... delicately concocted with fresh seasonal produce and spices that the Chef brings back from his stays in West Bengal. Indian cuisine, in particular, demands passion and time. Even if the Chef is inspired by modern techniques, preparation and cooking times often stretch over 8 to 9 hours.
