At the helm of two establishments facing each other on either side of Rue de Paris (Prestance and Quintessence), Cédric Berthaux navigates from one to the other with a comparable offering based on contemporary cuisine. At Quintessence, the focus is more on bistronomy (which seems to us to be more appropriate), with products well found to keep the bill down: veal tartar with hazelnut and lime ajo blanco broccoli mousseline with tarragon, redfish sea bream caponata anchoïade bell pepper coulis and virgin vegetables, apricot charlotte bavaroise with rosemary.
