The young and inspired chef presents dishes that are as beautifully plated as they are thoughtfully conceived, such as the perfect 64°C egg, hazelnut gnocchi, turnip mousseline, a full-bodied asparagus velouté, “biscuit de la mer,” Arctic char and lobster stuffed with a delicate pike filling, creamy herb risotto, lemongrass-infused shellfish coulis, a grilled beef tenderloin wrapped in Bigorre bacon, polenta with Comté cheese and gin-infused jus, a crispy cockle with Iranian black lemon, strawberry salad with candied red berries, fermented milk sorbet.
