Thibault Foulogne keeps up with all the latest fashions, lining up useful ingredients in an ambitious €51 menu: tuna tataki with mango pickles, burrata with marinated veal, fregola sarda with the fish of the moment, shiso jus and cherry condiment with duck fillet. A little extra personality wouldn't go amiss, but the service is serious and committed, and the €34 lunch menu is a good start.
