Chef's Restaurant Even if his stints at Grand Véfour and Lucas Carton (Senderens period) are long gone, Youssef Gastli's cooking, preparation and seasoning are all characterized by the same rigorous attention to detail that you only learn in the top establishments. At this small table in a quiet street, the man who left his native Tunisia once he'd passed his baccalaureate delivers a cuisine that's always both fair and gourmet, with an enticing purée of ratte, Morteau sausage, egg yolk and truffle, a dazzling hake with clams and gazpachuelo, and an addictive mont-blanc in a classic combination of clementine, yuzu and chestnut. A lovely cellar with a varied selection.
