Sylvain Sendra's takeover of this institution at the end of 2024 opens up new horizons for the famous house. These include the "Persimmon" gastro menus at €70 and €130, which evolve in the chef's universe, always inventive on a mastery of classic bases: gambas tartare siphon yogurt cromesquis comté truffé, quenelle à la lyonnaise langoustine juice, maigre en croûte artichoke lucullus vin jaune sauce, chocolate scallops and oyster leaf... Petrus nevertheless keeps its classics: oysters and seafood, pâté en croûte, sweetbreads with mushrooms.
