Chef's Restaurant At an altitude of 3,032 m, facing the highest peaks in Savoie, the Panoramic is a stopover that combines - in itself - all the superlatives. The highest restaurant, the highest ski area, just a stone's throw from Val d'Isère, one of the most exclusive resorts in the Alps. But above all, this place is a reflection of the Bouviers, father and son: the beard in battle, the leather well tanned, and a solid passion for local produce. The cuisine à la flamme is undoubtedly a promise not to be missed. Charcoal-cooked ribs, prime rib and marrow bones wait patiently on the grill. The same goes for the Bonneval blue fennel, or the sculptural grilled cauliflower, accompanied by a roasted sesame eggplant mousseline. But the other dishes also deserve our attention. The delicious little Piedmont agnolotti are accompanied by a creamy veal jus and grated beaufort, and the gnocchi are pan-fried with beaufort. The dessert buffet is clever: solid, generous tarts, but also "star desserts" inspired by friends of the house such as Yann Couvreur and Jeffrey Cagnes. The wine list, with its 1,400 references, is dizzying, but fortunately offers a few carefully chosen local vintages, such as these fine mondeuses from Arbin, or these Château de la Mar, available in magnum. A wonderful moment here: the choice of the right product, the mastery of perfect cooking and the desire to share this mountain hospitality.
