This gives additional freedom, both for the kitchen and for the guest, who appreciates this solid toque and its ideas of the moment, better and better translated: red mullet au chalumeau jus de bouillabaisse rouille et daïkon, roasted monkfish asparagus green peas cockles and poultry jus, chocolate cookie Kalamata olives and salted butter caramel, for a well-controlled sequence, in a sober and elegant bistro space.
