A volcanic cook at times, in the image of this magnificent region to which he so loves to pay homage, Adrien Descouls has gradually mellowed as his cuisine has matured and found its feet, immersing itself in the depths of the region's terroir. Committed to and rooted in the magnificent nature that stretches out at the foot of this elegant dining room, as if perched above the void, the cuisine of our Jeune Talent 2019 highlights fario trout, Cantal brass lamb, Auvergne cheeses, flowers and seasonal fruit in compositions that are at once highly technical, sensitive and full of gourmandise. Service has improved over the years, and the cellar is commented on with passion. The annex, called La Basalte, offers a simpler cuisine, but still focuses on local produce.
