All Lyonnais, and particularly regulars on the Croix-Rousse, agree that Fabrice Roche made the right choice when he set up shop on rue Pailleron eight years ago. The two toques are well hung, the tip is sure and you can follow the recommendation of your friends as well as that of Gault&Millau: it's fine work at a wise price with the very good €44 dinner menu, which blends technique and inventiveness: salt-cooked duck, citrus condiment, tamarind, vinaigrette, chickpeas; eight-hour braised chuck, pumpkin, quince condiment, tarragon; pineapple pecan praline, cauliflower and coconut yuzu sorbet. Elegant setting, weekday menu at €27, good connoisseur's cellar.
